Haskaps Grown in Grand Forks

We has have experimented with numerous recipes although they were for blueberries.  We have applied this to juices; syrup; berry crumble; pie filling; smoothies; and blended drinks;

For the latter, we often blend the basic juice (see below) with apple juice or ice tea,.   Below are two favorite recipes.  All of which can be frozen for extended storage.

Haskap Berry Crumble

This is one of our favorite recipes.  It is a basic crumble using haskap berries topped with ice cream.

Heat the oven to 350 deg  F.  Make filling with 4 cups of berries; 1 cup of sugar or sweetener; and 1/2 cup of flour.  Mix all and transfer into a 9X9" baking dish.

Crumble topping:1 cup flour; 1 cup quick cooking oats; 1/2 cup of sugar; and 1/2 cup butter.  Mix by hand in a bowl; spread over the berries and bake for 20 to 25 minutes.  
Haskap Juice

Basic recipe uses 1 1/4 cups of berries; 2 cups of water; and 1 cup of sugar.  Add all to pot, stir and bring to a boil, then simmer for about 10 minutes on gentle roll.  Remove and strain in some sort of coarse (we use metal cone type) filter.  You can also pour 1/2 cup of water over the strainer with pulp and add this to the juice.

The skins and seeds are very soft compared to other berries and can use as toppings.

Syrup can also be made by using more sugar and boiling longer until the mixture thickens.
